- Use a thermometer. At sea level, water boils at 212°F. At Denver's altitude, it boils around 202°F — ideal for pour-over. But in the mountains above 8,000 ft, boiling water is closer to 196°F, which can under-extract. Try a 30-second rest after boiling before pouring.
- Grind slightly finer. Lower extraction temperatures pull less efficiently from coarser grinds. A slightly finer grind compensates and gives you a fuller cup.
